Make a paste: In a blender, add 20 Spinach leaves, ¼ cup Coriander leaves, 1-2 large garlic cloves, 1-2 Green Chilli

Heap 1 tbsp oil, add 1 tsp Cumin Seeds, 1 Bay leaf, 1-2 Star Anise, 1 inch Cinnamon stick, 1 cup Sliced Onions, 1-2 garlic cloves, chopped, 2-3 Green chillies, ¼ cup Peas, ¼ cup Sweet Corn, let them cook for a while until fragrant.

Add 2-3 cups cooked rice, give it a good stir and cook covered. Add 1 tbsp lime juice and salt to taste. Your palak corn rice is ready.
