Amritsari Gond ka Halwa is a traditional winter dessert prepared especially on Lohri. Gond is an edible gum extracted from the bark of trees and used in several Indian desserts. It provides a warming and indulgent experience and is mostly savoured in winter. Prepare this halwa in 7 easy steps.

½ cup semolina ( 100 g ) ¼ cup almonds ( 50 g ) ¼ cup cashews ( 50 g) ½ cup edible gum ( 100 g ) ½ cup dry grated coconut ( 50 g ) 1½ cup wheat flour ( 250 g ) 1½ cup jaggery ( 250-300 g ) 1 tsp ginger powder 1 tsp cardamom powder 1 cup desi ghee

Prepare sugar syrup by boiling water and adding jaggery. Cook until melted completely.

Add sauth or ginger powder and cardamom powder for fragrance and flavour.

Roast slender sooji in a pan for halwa, and set aside. In the same pan, roast almonds and cashews until crispy.

Fry Gond in the same ghee until puffy, in batches.After roasting, set aside the Gond. Crush roasted dry fruits and Gond coarsely.

Roast wheat flour in ghee until lightly golden. Add roasted suji, crushed Gond, dry fruits, and coconut shreds.

Mix well, add jaggery syrup, and cook on medium flame until ghee separates. In 3-4 minutes, the halwa is ready.
