Ingredients

2 cups fresh corn kernels 1 onion, chopped 4 garlic cloves ½ tsp cumin seeds 2 tbsp olive oil 2 cups vegetable broth ½ carrot, chopped 1 red bell pepper, chopped ¼ cup peas Coriander leaves, chopped 2 green chillies, chopped Salt, to taste Black pepper powder, to taste

Step 1

Heat 1 tbsp olive oil in a pan, then add cumin seeds, 1.5 cups corn, onions, and garlic cloves.

Step 2

Saute and cook for 5 minutes, then add salt, pepper and vegetable broth. Simmer until the veggies are cooked.

Let the mix cool down, then blend it into a smooth paste and pass it through a sieve if you need.

Heat the remaining olive oil in a pan, then add chopped carrots, bell peppers, peas and remaining corn kernels.

Add salt, pepper and chillies, and cook until the veggies are softened. Now add the corn-onion base and simmer for 10 minutes.
