Khoya khurchan paratha is a unique flatbread to enjoy during the holy month of Ramadan. This stellar paratha is not like the regular savoury paratha. It is sweet instead, with the addition of keora water and kesar, which adds a flavourful and aromatic touch to the parathas.
200g khoya (mawa) 1/4g saffron strands 5 ml of Keora water 50g granulated sugar 10g cardamom powder 400g whole wheat flour 3 tablespoons of ghee A pinch of salt
Combine khoya, saffron-infused kewda water, sugar, and cardamom powder in a bowl. Mix well to form a smooth filling.
Knead whole wheat flour with water and a pinch of salt until soft and pliable.
Separate the dough into equal-sized balls to make individual parathas.
Flatten each dough ball into a small circle using a rolling pin.
Place a portion of the khoya mixture onto one-half of the dough circle.
Fold the dough over the filling, press the edges to seal, and cook in ghee until golden brown.
