Lilva Kachori: A Perfect Gujarati Snack To Enjoy With Evening Tea

If you say you are a fan of Gujarati cuisine, you need to try delicacies beyond dhokla, khakra, and fafda. Lilva kachori is among a few snacks that deserve all your attention. It boasts sweet, tangy, and spicy flavours, making it a perfect partner for a hot cup of chai.

For Kachori & Garlic Paste 1-inch ginger 1.5 cups maida 3 tbsp oil 2 garlic cloves A pinch of salt Oil for frying 2 roughly chopped green chillies

For Filling 1 pinch of Hing 1 tbsp oil 1.5 cups lilva or pigeon peas ½ tbsp chopped raisins 2 tbsp chopped cashews ½ tsp coriander powder ½ tsp garam masala ½ tsp cumin powder ½ cup coriander leaves 1 boiled potato (optional) ½ cup boiled green peas (optional) ½ tsp cumin seeds 3 tbsp lemon juice

Step 1

Knead the dough for lilva kachori by combining maida, salt, and water. Add some oil to ensure the kachoris turn out crispy.

Step 2

Knead a semi-soft dough and keep it aside. Meanwhile, grind ginger, garlic, and chillies to make a coarse paste.

Step 3

Rinse lilva beans and grind them into a coarse paste. Heat a pan and roast spices and ginger-garlic paste in it along with lilva beans.

Step 4

Garnish the mixture with coriander leaves and lemon juice. You can also add mashed potatoes and steamed green peas to add flavour depth.

Step 5

Stuff the dough with spiced lilva mixture and deep-fry kachoris until the crust turns crispy. Serve these kachoris hot or cold with green chutney.
