One of the ingredients adding flavour to a vada pav is dry garlic chutney. Seasoned with spices and buttery notes of garlic it is popular among lovers of Mumbai’s popular street food. Here is a Maharashtrian recipe for dry garlic chutney that you must try at home.
8-10 gm garlic cloves ½ cup coconut Salt to taste 1 teaspoon oil 2 teaspoons sesame seeds 1 tablespoon Kashmiri red chilli powder
To a hot kadhai, add oil and garlic. Saute for at least 30-40 seconds.
Add sesame seeds to the mix and saute until they become toasty.
After turning off the heat, toss the grated coconut and mix well. Let the mixture cool off.
Add red chilli powder and salt to taste before adding everything to a food processor.
Grind the ingredients into a coarse dry mixture. Add a teaspoon of oil and grind for 2-3 seconds again.
Store the dry garlic chutney in an airtight container. You can serve it with snacks or meals or use it as an excuse to make a vada pav at home.
