Sabudana paratha is not necessarily a vrat delight but definitely, a dish that you must try. It is a healthy and gluten-free pick over regular parathas and tastes absolutely delicious. Here is a quick recipe for it.
1 cup tapioca pearls 2 boiled potatoes 1 tsp cumin seeds 1 finely chopped green chilli 1 tsp red chilli powder 1 tbsp coriander leaves 2 tbsp coarse peanut powder 1-inch chopped ginger Salt to taste Oil for grading and roasting 1 tsp amchur powder
Soak a cup of sabudana in a cup of water for at least four hours or until they double up in volume and break easily.
Take them out in a bowl, and grate potatoes over it. Add spices, green chilli, ginger, and salt to taste.
Take roasted peanuts and grind them into coarse powder. Add this powder to the bowl.
Knead the ingredients into a sticky dough. Grease your palms with oil and add a small tikki on butter paper.
Softly press the edges to increase in size and gently place it on a hot skillet.
Apply oil on the edges and cook the paratha until both sides are brown and crispy. Enjoy!
