Gujaratis call poha ‘Batata poha’, a savoury breakfast and snack recipe that is fulfilling and healthy. Its easy recipe makes it a popular choice across India. If you have tried Maharashtrian and Indori, try Gujarati poha by following the instructions.
2 slit green chillies ⅕ cups poha 1 medium potato 2-3 tablespoons sugar ½ teaspoon mustard seeds 1 tablespoon lemon juice 2 tablespoons coriander leaves 2 tablespoons toasted peanuts 2 tablespoons oil Salt to taste 8-10 curry leaves ½ teaspoon turmeric
Rinse poha and keep it aside. Heat oil in a pan and add mustard seeds.
Once seeds start to splutter, add hing, green chillies, turmeric powder, and curry leaves.
After sauteing, add boiled potatoes, salt to taste, and sugar. Stir for a few minutes.
Add poha and toss it around. Drop a few splashes of water and put the lid on.
Uncover the pan and toss the poha again. Add lemon juice and garnish with coriander leaves.
Serve the poha with some sev and toasted peanuts on the top.
