The secret to acing the recipe for aloo paratha is to prepare a spiced and chatpata stuffing. It carries the flavours of the paratha and makes every bite scrumptious. Follow this guide.
3 boiled potatoes 1-2 chopped green chillies Salt to taste ½ tsp grated ginger 1 tsp coriander powder 2 tbsp coriander leaves 1 tsp kasuri methi ½ tsp fennel seed powder 1 tsp chaat masala 1/2 -1 tsp red chilli powder ¼ tsp crushed ajwain seeds
Boil potatoes in a pressure cooker. Make sure they are not soggy.
Once potatoes have cooled off, peel their skin, and mash them in a deep bowl.
Add chillies, ginger, and spices to the potatoes. Mix them nicely with your hands or a masher.
Add chaat masala and salt to taste in the end after tasting the stuffing.
Add coriander leaves and give everything a good mix.
Make small balls of this stuffing and encapsulate them in the wheat flour dough.
