Lemon Tiramisu For A Zesty Summer Treat

This tangy, bright and creamy tiramisu is packed with lemony flavours and the most perfect dessert to make ahead of time to enjoy after a meal or as it is during warm summer evenings.

INGREDIENTS [FOR SYRUP]

½ cup water ¼ cup sugar Lemon rind Juice of 1 lemon

INGREDIENTS [FOR TIRAMISU]

4 egg yolks 3 eggs 1 cup sugar 1 tablespoon lemon zest Juice of 2 lemons ½ cup softened butter 1 cup whipped cream 1 cup cream cheese 1 packet vanilla loaf cake

METHOD

Add all the ingredients for the syrup to a saucepan and stir until the sugar starts to dissolve.

METHOD

Place it on a gentle heat and let it simmer until the mixture has turned liquid and runny. Set aside to cool.

Whisk the egg yolks, eggs, sugar, lemon zest and juice together.

METHOD

Transfer the mixture to a pan and cook on a low flame until it begins to turn glossy.

METHOD

Add the butter and stir it in to combine. Let it cool for a bit.

METHOD

Meanwhile, use an electric whisk to whip the cream cheese until it has soft peaks. Mix a third of the portion of the lemon curd into the cream cheese and stir well.

METHOD

Add the whipped cream and fold in gently.

METHOD

Slice the loaf of vanilla cake and dip each slice in the lemon syrup before lining a large baking dish.

METHOD

Add the cream cheese filling layer on top and repeat the process a second time around.

METHOD

Spoon over some more lemon curd on the topmost layer and let it chill in the fridge for 3-4 hours.

METHOD

Cut into squares and serve chilled.
