Have leftover rice from previous meal? Don’t throw it away. Here is an easy recipe to make delicious cutlet at home with leftover rice.

2 cups leftover rice (mashed), 1 potato (boiled and mashed), ¼ cup carrot ¼ cup (grated), ½ cup capsicum, 2 green chilli, 1 onion, 1 tsp red chilli powder, ½ tsp pepper powder, ½ tsp garam masala, 2 tbsp rice flour, 2 tbsp corn flour, salt as required, 2-3 tbsp oil

Mix mashed potato with cooked rice. Then add onions, carrot, capsicum, green chill, red chilli powder, corn flour, rice flour and all masala powders.

Mix everything nicely till combined. Take small round balls and flatten them in your hands. Heat oil in a pan and shallow fry the cutlet.

Flip and cook them till golden. Drain on a tissue paper and enjoy with tomato sauce.
