Missi Roti is a Punjabi bread which is mostly made during winters in tandoor or clay oven. Here is an easy recipe.
1¼ cup wheat flour, ¾ cup gram flour, ¼ tsp turmeric, ½ tsp pepper (crushed), ¼ tsp carom seeds, ½ tsp amchur, pinch asafoetida, 1 tsp kasuri methi, ½ tsp ginger-garlic paste, 1 chilli, ½ onion, 2 tbsp coriander, ½ tsp salt, water for kneading, wheat flour for dusting, oil or ghee for roasting
In a large bowl take wheat flour, gram flour, turmeric, pepper, ajwain, amchur, hing, kasuri methi, ginger- garlic paste and chilli.
Additionally add ½ onion, 2 tbsp coriander and ½ tsp salt. Mix well. Then add water, a tsp of oil and knead a smooth dough.
Now pinch a medium sized ball dough and roll it into a roti, also dust with some wheat flour.
Heat a tawa and cook the roti for a minute on both the sides. Also brush oil / ghee. Serve missi roti with veg kadai, raita and pickle.
