This South-Indian dish is simple to make but tastes delicious.
2.5 cup cooked rice, 2 tbsp lemon juice, 2 green chilies, 1 tsp ginger, salt to taste, 1/2 tsp turmeric For Tempering: 2 tbsp cooking oil, 2 tbsp peanuts, 1.5 tsp mustard seeds, 1/4 tsp asafoetida, 1 tbsp urad dal, 1 tsp Bengal gram, 4 dried red chilies, 12 cashews, 10 curry leaves.
Heat oil in a pan and stir fry peanuts till golden brown and keep aside.
Now add both the dal and cashew and when it starts changing color, add chillies, curry leaves and asafoetida.
Add turmeric, fried peanuts, rice and salt and stir to mix well.
Switch off the flame and add lemon juice and mix.
Keep it covered for about 10-15 minutes and serve.
