Japanese long soba noodles, commonly known as "Toshikoshi Soba," are thought to bestow long life and are a sign of longevity. When consumed in a single, lengthy gulp without pausing, these noodles represent the easy passage from one year to the next. Learn how to make these Soba Noodles to begin the New Year with something tasty and auspicious.

30 grams soba noodles (dry) 3 tablespoons rice wine vinegar 1/3 cup soy sauce 2 tablespoons sesame oil 1 tablespoon brown sugar 2 cloves garlic, minced 1 tablespoon ginger, grated 1/4 teaspoon red pepper flakes 2 tablespoons canola oil or peanut oil 1/4 cup green onions, thinly sliced

In a large pot of boiling water, cook the soba noodles according to the package instructions. Once cooked, rinse the noodles under cold water, drain, and set them aside.

In a small bowl, whisk together the rice wine vinegar, soy sauce, sesame oil, brown sugar, minced garlic, red pepper flakes, and grated ginger to make the sauce.

Place a large skillet over medium-high heat. Add the canola oil or peanut oil and heat it until it shimmers.

Once hot, add the chopped green onions and cook, stirring, for about 30 seconds or until they just start to soften.

Pour the prepared soy sauce mixture into the skillet and cook it for an additional 30 seconds.

Add the cooked soba noodles to the skillet and toss them with the sauce until the noodles are heated through and well coated.
