Rasam, traditional South Indian soup made with tomatoes tempered with spices and herbs. This is how to make it at home.
Ingredients - 4 tomatoes, 1 tsp cumin seeds, 10 black peppercorns, 5 garlic cloves, 1 tbsp oil, 1/4 tsp mustard seeds, 5-6 curry leaves, 1 dry red chilli, 3-4 tbsp coriander leaves, 1/2 tsp red chilli powder, 1 tsp hing, 1¼ cups water, and salt to taste.
Chop two tomatoes for pureeing and finely chop the rest and set aside.
Grind the cumin, black peppercorns, and garlic to form a coarse paste. Set aside.

Add the roughly chopped tomatoes and blend them into a puree.

Heat a pan over and add the oil. Add the mustard seeds, curry leaves, hing, and the dry red chilli, split in half.

Add the coarse paste to the pan and sauté it with the spices for a minute.

Add the tomato puree to the pan and cook for 4-5 minutes.

Add the chilli powder and salt to the puree and toss in the finely chopped tomatoes as well.
Add water to the pan and cook on low heat for 5 more minutes.

Now add the coriander leaves as garnish and serve hot with plain white rice or have it just the same.
