Place layers of partly cooked biryani in a pot with a heavy bottom. Cover the lid closely with dough or a cloth to keep steam inside.
Place a tawa (flat griddle) on the gas stove to evenly distribute heat and prevent direct contact with the biryani vessel, ensuring gentle cooking.
Set the flame to low to simulate the slow-cooking process of traditional dum, allowing the flavours to mix together and the meat or vegetables to become tender.
Let the biryani cook undisturbed for the specified time, allowing the magic of dum to work its charm.
