Made with bottle gourd and very few spices, lauki soup is super filling and also keeps you warm during winter.
1 medium bottle gourd (cut into cubes), 1 onion, 2 garlic (crushed), 10 cloves, salt to taste, black pepper powder to taste, a dash of vinegar
Pressure cook bottle gourd, onions and garlic with four cups of water till three whistles. Then strain and grind it into a smooth paste. Strain the pulp and keep aside.
Heat a non-stick pan. Boil the strained water and vegetable pulp. If the soup thickens, add a little water to get a soup consistency.
Add salt and pepper powder to taste. Mix well. Serve hot with a dash of vinegar.
