Lauki, ghiya, or bottle gourd is an ideal vegetable for the changing season. Here’s a recipe of lauki ke kofte that will make you fall in love with the vegetable even if you aren’t used to its taste.
1 ghiya or bottle gourd 1/2 cup besan Oil for frying 1/2 cup water 1 onion 2 tomatoes 1 ginger 4 cloves garlic 1 teaspoon chilli powder 1/4 teaspoon turmeric powder 1 teaspoon coriander powder 1/4 teaspoon garam masala 1 chopped green chilly Salt to taste
Start by grating lauki to make the koftas.
Mix grated lauki with besan and all the spices to make a batter.
Take small balls and deep fry them to make koftas, and set them aside.
Make the gravy by cooking chopped onions, cloves, ginger, and garlic.
Add chopped tomatoes, spices, and a little water. Let the gravy simmer.
Add in fried koftas and cook for 15-20 minutes. Garnish with coriander leaves and serve.
