Indulge in the delightful flavours and textures of homemade lauki kofta, a delectable Indian dish featuring grated bottle gourd fritters in a rich tomato-based gravy.
For the koftas: 2 cups grated Lauki 1/2 cup besan 1/2 tsp cumin powder 1/2 tsp coriander powder 1/2 tsp red chili powder 1/2 tsp garam masala Salt to taste Oil for deep frying
For the gravy: 2 tbsp oil 1 tsp cumin seeds 1 chopped onion 2 tomatoes, pureed 2 tsp ginger-garlic paste 1/2 tsp turmeric powder 1 tsp red chili powder 1 tsp cumin powder 1 tsp coriander powder 1 tsp garam masala Salt to taste 1/4 cup cashew cream Fresh coriander (garnish)
In a mixing bowl add the Squeeze grated bottle gourd. Now Add besan, cumin powder, coriander powder and red chili powder.
Add garam masala, and salt. Mix well now Heat oil in a kadai for frying the koftas.
Now shape them into small balls and golden fry them. On a napkin place them to absorb access oil.
Now in a pan, heat oil and add cumin seeds, chopped onions, ginger garlic paste and saute.
Now Add tomato puree and cook. Add turmeric powder, red chili powder, cumin powder, coriander powder, garam masala, and salt.
Now Add water to achieve the desired consistency of the gravy. Simmer for 5-10 minutes.
Now Gently place the fried koftas into the gravy and simmer. Garnish with fresh coriander leaves.
