Chilla is usually made using gram flour and a filling of vegetables. However, monsoon calls for using seasonal produce like bottle gourd to make the desi pancakes more nutritious. Try this recipe of lauki chilla.
1 cup besan 1 tsp coconut oil ¾ cups grated bottle gourd ¼ tsp turmeric powder ¼ cup curd A pinch of asafoetida 1 tsp chilli powder Salt to taste
Combine besan, water, and grated bottle gourd in a deep bowl. Make a thick paste with no lumps.
Add salt to taste, turmeric, curd, asafoetida, and red chilli powder. You can also drop chopped green chillies.
Heat a non-stick pan and pour a decent amount of batter in the middle.
Grease the chilla with coconut oil and cook until the base turns golden brown.
Serve the chilla hot with ketchup or chutney of your choice.
