Made with bottle gourd and spices, this dish is perfect for a wholesome lunch when paired with rice or roti. Here is an easy recipe to make lauki bharta at home.

500 g bottle gourd (peeled and cubed) 4 onions chopped finely 2 tomatoes chopped finely 1 cup peas (frozen or fresh) 1 green chilli chopped finely 1/2 tbsp chopped garlic 1/2 tbsp chopped ginger 1 tsp turmeric powder 1 tsp chilli powder 1 tsp coriander powder 1/2 tsp cumin powder 1/2 tsp garam masala Salt as per taste Chopped coriander leaves for garnishing
Take a pressure cooker add lauki, 1 ½ cup of water, 1/2 tsp salt and cook up to 3 whistles. Then mash it with a masher.

Heat 3-4 tbsp oil in a pan and sauté garlic, ginger, onions and green chilli and cook till it is translucent. Add the tomatoes and cook till it is mushy.

Add all the dry spices, salt and cook for a minute or two. Then add the mashed lauki and cover and cook for 5 more minutes. Garnish with coriander leaves and enjoy.
