Khichdi is the most nutritious and comforting meal one can have. Filled with the goodness of lentils and ghee, it goes with your every mood. Try making it with garlic and spinach for an extra kick of flavour and nutrition.
250 grams spinach 4-6 cloves of garlic ¾ cups rice ¼ cup green moong dal Salt to taste ¼ tsp turmeric powder 2 tbsp ghee 1 tsp ginger and green chilli A pinch of asafoetida ½ cup chopped onions 1 tsp garam masala & red chilli powder 1-2 dry red chillies 1 tsp cumin seeds 2 tsp coriander powder
Soak dal and rice in the same bowl for at least a couple of hours. It will take them less time to cook in a pressure cooker.
Blanch spinach leaves for 2 minutes and puree them. In a kadhai, heat oil and add cumin seeds, garlic, and turmeric powder.
After sauteing the spices, add onions. Once onions are translucent, add palak puree and cook with other spices.
Once this mixture is half done, pour it in the pressure cooker along with lentils and rice.
After 3-4 whistles, turn off the flame and prepare the tempering.
Add the tempering of hing, cumin seeds, red chillies, and chopped garlic on top of hot lasooni palak khichdi and enjoy.
