Also known as palmyra, the tal is a seasonal fruit that is found in abundance in Bengal, just in time to be enjoyed as fritters, payesh and more for Janmashtami.

1 cup sweet palm pulp 3 small ripe bananas 1 cup grated coconut ¾ cup sugar 1 cup whole wheat flour ½ cup rice flour ½ cup semolina Mustard oil, for frying

Combine the powdered sugar, grated coconut, semolina and rice flour in a large bowl.

Smash the bananas with your hands and add them to the mixture and stir well.

Mix in the sweet palm pulp into this, followed by the wheat flour, to make a thick batter.

Set aside while you heat oil in a pan and use a spoon to scoop small portions of the batter into then hot oil.
