Paruppu Payasam, a creamy dessert, combines dal, jaggery, milk, and coconut milk, garnished with nuts and flavourings. Also known as Moong Dal Payasam, it pairs well with rice and is often enjoyed with papad and vada.

½ cup of Moong Dal ¼ cup of Jaggery ½ cup of Milk Water 1 teaspoon of Ghee 1 teaspoon of powdered Cardamom 4 Cashews (broken into pieces)

In a pan, lightly roast the Moong Dal with a little Ghee until it releases a pleasant fragrance, ensuring it doesn't brown too much.

Pressure cook the roasted Moong Dal with about ¾ cup of water and milk until you hear 3 whistles.

Once cooked, mash the Dal and add powdered Jaggery.

Boil on low flame for 2 minutes, adjusting the consistency with milk or water as needed

When it reaches the desired consistency and is smooth, serve it into a dish and garnish with cashews before serving.
