Kothbel Ki Chutney: Try This Chatpata Wood Apple Condiment At Home

The unique and underrated bel fruit makes for a wonderfully umami chutney due to its sour fruitiness. Here’s how you can make it.

INGREDIENTS

1 medium-sized wood apple 1 small onion, chopped 2 fresh red chillies 3 cloves garlic Salt to taste 1 teaspoon lemon juice

METHOD

Scoop out the pulp of a wood apple, like you would an avocado and add it to a deep dish or mortar and pestle.

METHOD

Using a fork or the pestle crush it lightly before adding the chillies and garlic. Continue to pound until combined.

METHOD

Add the onions, salt and lemon juice and mix thoroughly. Serve with some rice and a vegetable dish on the side.
