Koraishutir Kochuri is a cherished delight during Durga Puja, a Bengali festival. These crispy, pea-stuffed pastries offer a delightful taste of tradition.
For the Dough: 400 grams of maida 100 grams of atta ½ tsp of Salt 2 tsps of Refined Oil
For the Stuffing: 500 grams of Green Peas 2 tsps of Ginger Paste 2 Green Chilies (adjust according to taste) ½ tsp of Salt 1 tsp of Sugar ¼ tsp of Asafoetida 1 tsp bhaja masala 1 tbsp of Refined Oil
Heat oil in a pan and temper the asafoetida and ginger paste, and cook for 1 minute on low flame.
Grind the peas into a smooth paste along with the chillies and cook on medium flame until the raw aroma of peas is gone.
Add 1 tsp of Bhaja Masala Powder, Salt, and Sugar to the mixture and mix well, cook until the mixture stops sticking to the pan.
Take both types of flour, add salt, and sift them together then add oil and mix by hand until it’s a crumbly texture.
Now, add ½ a cup of water to the flour mixture and knead the mixture, adding water as needed until it's a soft dough. Rest it for 10 minutes.
Divide the dough into equal portions, flatten it slightly put a spoon of the pea stuffing in the middle and seal the edges. Roll each ball out to flatten it slightly.
Deep fry the kachoris on medium flame until they puff up and are golden on both sides and serve hot.
