Kolkata Style Egg Roll is the city's most iconic street food, known for its flaky paratha, perfectly cooked egg, and savoury fillings. This guide will help you recreate this delicious snack at home.
300 g maida (flour) 6 g salt 14 g sugar 16 g dalda (shortening) 180–200 ml warm water 4 eggs 150 g onions
4 pcs green chillies 1 large lime 1–2 tsp chaat masala 1–2 tsp rocksalt 80 g tomato ketchup 1 pc cucumber (optional) 75 g vegetable oil
Mix flour, salt, sugar, and dalda in a bowl until it resembles breadcrumbs. Add warm water and knead into a soft dough; rest for 30 minutes.
Slice onions and green chillies, mix with lime juice; set aside. Divide dough into portions, roll each into a disc, apply oil, and roll into a cone.
Flatten and re-roll each cone into a larger disc. Beat eggs with salt; fry parathas on both sides, adding beaten egg.
Assemble with chaat masala, pickled onions, cucumber, lime juice, and ketchup. Roll tightly and wrap in paper.
