Kodo ko roti is a nutritious pancake recipe made from Kodo millet. This delicacy is prominent in several regions of India and Nepal and is often served with chutney, curries or yoghurt. Here’s an easy recipe for kodo ko roti you can make for breakfast, lunch and dinner.

Ingredients

1 cup kodo millet flour 1 1/2 cups water 1/2 teaspoon salt (adjust to taste) Oil or ghee for cooking

Combine kodo flour and salt in a bowl. Gently add water to make a smooth pourable batter without lumps.

Step 2

Let the batter rest for 10-15 minutes to allow the flour to absorb the water which helps in getting a better texture for roti.

Step 3

Heat your pan and grease it with oil or ghee. Gently put a ladleful of batter and spread it in a circular motion.

Cook for 2-3 minutes then flip and cook for another 1-2 minutes.

Step 5

Repeat the process until all the batter is finished.
