Qatar's famous Chai Karak is a spiced black tea concoction made with evaporated milk with a distinct caramel, terracotta hue to it. Follow these steps to make it at home.
Ingredients - 4 tbsp white sugar, 4 cups of water, 2 tbsp loose black tea, 4 pods of cardamom, 3/cloves, 5-6 saffron threads, 3 slices of ginger, and ⅔ cup evaporated milk.
In a saucepan add the water and bring it up to a boil.
Add the crushed cardamom, cloves, ginger, and black tea to the hot water.
Once the tea has been infused, add the evaporated milk, sugar, and saffron to the water.
Turn the heat down to low and let the tea simmer for 5 more minutes.
Strain the tea onto a kettle and serve warm, or chilled over ice.
