Korean cuisine is all the rage and this spiced and soupy ramen recipe is the perfect blend of flavours to celebrate the cuisine.
2 packs of ramen noodles 2 cups of vegetable broth 1 cup of kimchi, chopped 1 tablespoon of sesame oil 2 cloves of garlic, minced 1 tablespoon of soy sauce 1 tablespoon of gochugaru (Korean red pepper flakes) 1 teaspoon of sugar 1 cup of mushrooms, sliced 2 green onions, chopped 1 boiled egg (optional, for garnish)
Cook the ramen noodles according to the package instructions. Drain and set aside.
In a large pot, heat sesame oil over medium heat. Add minced garlic and sauté for a minute until fragrant.
Add chopped kimchi to the pot and stir well. Cook for another 2-3 minutes.
Pour in the vegetable broth. Add soy sauce, gochugaru, and sugar. Stir to combine.
Toss in sliced mushrooms and cooked ramen noodles into the pot. Let it simmer for 5-7 minutes until the mushrooms are tender.
Ladle the kimchi ramen into bowls. Garnish with chopped green onions and a boiled egg if desired.
