Khichu Recipe: A Gujarati Snack Made With Papad Dough

Khichu is an innovative recipe made from papad dough. It is prepared using rice flour and Indian spices. The paste for papad tastes so good that Gujaratis enjoy it as a side dish or snack. Here is a quick recipe for you to try at home.

Ingredients

1 finely chopped green chilli 1 cup rice flour 1 tsp cumin seeds ¼ tsp baking soda 2.5 cups of water ¼ tsp ajwain seeds Salt to taste

Step 1

In a large hot kadhai, mix water, baking soda, ajwain, salt, and cumin seeds.

Step 2

Let the mixture come to a boil and add rice flour. Stir and let it simmer.

Step 3

Keep stirring until the rice flour absorbs water and the paste thickens.

Step 4

If any lumps are forming in the mixture, break them.

Step 5

After simmering for 5-6 minutes, turn off the flame.

Step 6

Serve Gujarati khichu with a sprinkle of red chilli powder and enjoy it with pickle spices and peanut oil.
