All you need to survive the heat of the summer is something cool and refreshing. And what’s better than the cooling kheera and refreshing curd coming together as a raita? Try this quick recipe.
2 cucumbers 1 cup dahi 1 tablespoon lemon juice 2 tablespoons olive oil 1 tablespoon chopped mint Salt and pepper to taste
Rinse the cucumbers, peel the skin, and grate them.
Add some salt to the grated cucumber to eliminate the extra water content.
Whisk curd, olive oil, lemon juice, salt, and pepper. Add grated cucumber and mix well.
Garnish with chopped mint leaves and refrigerate for about half an hour before serving.
