1 cup black-eyed peas, soaked 2 tbsp oil 1 tsp cumin seeds 1 onion, finely chopped 1 tsp ginger-garlic paste 2 tomatoes, pureed ½ tsp turmeric powder 1 tsp red chili powder 1 tsp cumin powder 1 tsp coriander powder Salt to taste 1 tbsp jaggery or brown sugar 1 tbsp tamarind pulp Fresh coriander leaves for garnish

Cook soaked black-eyed peas in water until tender. Drain and set aside.

In a pan, heat oil and add cumin seeds. Sauté until they sizzle.

Add chopped onions and sauté until golden brown.

Stir in ginger-garlic paste and cook for a minute.

Add tomato puree, turmeric, red chili, cumin, and coriander powders. Cook until oil separates.
