Kharbooja Kheer: A Step-By-Step Recipe For A Refreshing Dessert

Kharbooja kheer is a unique take on the traditional Indian dessert as it incorporates muskmelon in the mix. Its flavour is instantly enhanced and the recipe isn't complicated either. Here's how you can make this creamy dessert at home:

Ingredients

1 cup muskmelon (kharbooja), peeled and chopped 1 litre of milk 1/4 cup rice, washed and soaked for 30 minutes 1/2 cup sugar 1/4 teaspoon cardamom powder A few saffron strands 2 tablespoons chopped nuts (almonds, pistachios, and cashews) 1 tablespoon ghee

Step 1

In a heavy-bottomed pan, heat the ghee before adding the rice. Sauté for 2–3 minutes.

Step 2

Pour the milk, bring it to a boil, and then lower the heat. Simmer, stirring periodically, until the rice is thoroughly cooked and the milk has thickened (approximately 20–25 minutes).

Step 3

Stir in the sugar and cardamom powder. If using saffron, add the strands. Cook for another five minutes.

Step 4

Remove from heat and let kheer cool to room temperature. Add the cut muskmelon chunks and stir thoroughly. Garnish with chopped nuts.
