Khaman dhokla is a popular Gujarati snack that is loved for its soft, fluffy texture and tangy flavour, topped with aromatic tempering.
1 cup chickpea flour (besan) 1 tbsp semolina (rava) 1 tbsp lemon juice 1 tsp ginger-green chilli paste 1 tsp fruit salt (Eno) 1 cup water 1 tsp sugar Salt to taste
For Tempering: 1 tbsp oil 1 tsp mustard seeds 1 tsp sesame seeds 2 green chillies, slit 8-10 curry leaves A pinch of asafoetida (hing) 2 tbsp chopped coriander leaves (for garnish) 2 tbsp grated coconut (for garnish)
In a bowl, add chickpea flour, semolina, lemon juice, ginger-green chilli paste, sugar, salt, and water. Mix well to form a smooth batter.
Add fruit salt (Eno) to the batter and mix gently. The batter will become frothy and increase in volume.
Now, pour the batter into a greased steaming tray. Steam for about 15-20 minutes on medium heat.
Take a toothpick and check whether it's cooked or not. Allow the steamed dhokla to cool slightly. Then cut into squares.
In a pan, add mustard seeds and let them splutter. Then add sesame seeds, green chillies, curry leaves, and hing. Saute well.
Now, Pour the tempering over the cut dhokla pieces, garnish with fresh coriander, and enjoy!
