Anything that is deep-fried and coated in sugar, usually never disappoints. Inspired by the classic key lime pie, these golden-brown doughnut holes are filled with a deliciously citrusy lime cream filling.
1 + ¾ cups all-purpose flour 2 ½ teaspoons baking powder ½ cup plain yoghurt 4 tablespoons butter, cubed 1 teaspoon salt Juice and zest of 1 lime ½ cup readymade vanilla pudding 2 tablespoons sugar Vegetable oil, for frying
Combine the vanilla pudding, lime zest and juice along with the salt in a small bowl and allow it to sit for a few minutes.
Whisk the flour, baking powder and sugar in a mixing bowl.
Add the butter and stir until the flour absorbs the fat.
Gently stir in the yoghurt and combine everything into a ball of shaggy dough. Add a tablespoon more, if necessary.
Knead the dough on floured work surface until it is less sticky and forms a smooth ball.
Roll the dough out into a sheet and cut into 10-15 squares.
Simultaneously, heat the oil in a frying pan and roll each square into a ball.
Gently drop each ball into the hot oil and fry on all sides on a medium heat for 3-4 minutes, until they turn golden-brown.
Serve warm, rolled in more powdered sugar, with the lime custard to dip on the side.
