Kulfi is the quintessential Indian frozen dessert that you will always see by the by the roadside during the summer months. It is a creamy dessert with a lot of flavour from various ingredients. Here's a kesar mawa kulfi recipe if you are a fan of this decadent dessert:
1 litre of full-fat milk 1 cup grated khoya (mawa) 1/2 cup sugar 1/4 teaspoon saffron (kesar) strands 1/4 cup chopped nuts (almonds, pistachios) 1/2 teaspoon cardamom powder
Boil milk and add mawa, sugar, teaspoon saffron strands, chopped nuts, and cardamom powder. Cook until the mixture thickens slightly.
Allow the milk mixture to cool down to room temperature. Pour the cooled mixture into kulfi moulds or small bowls, leaving space at the top. Insert sticks or skewers into the moulds.
Place the moulds in the freezer and freeze for at least 6–8 hours until completely set. To unmold the kulfi, briefly dip the moulds in warm water to loosen the edges. Gently slide the kulfi out of the moulds.
Serve the Kesar Mawa Kulfi chilled as a delicious dessert.
