Kerala-Style Vegetable Stew For The Perfect Dinner Tonight

White-hued, sublime and packed with the best of seasonal vegetables, this simple stew from Kerala cuisine is just what you need for dinner tonight. Have it with appams or with rice, but have it you must. Here’s the recipe for you to try out.

Ingredients

½ cup beans, chopped ½ cup potatoes, chopped ½ cup carrots, chopped ½ cup peas, chopped ½ cup cauliflower, chopped ½ cup onions, chopped 1 tbsp coconut oil 2 sprigs curry leaves 2 green chillies, chopped 1 cinnamon stick 2 cloves 2 cardamom ½ tsp ginger, minced ½ tsp mustard seeds 2 cups coconut milk 1 cup water Salt, to taste

Step 1

Heat coconut oil in a pot, then add cinnamon, cloves, cardamom, curry leaves, ginger and mustard seeds.

Step 2

Once these stop spluttering, add the onions, carrots, cauliflower, potatoes, beans and peas.

Step 3

Mix well, add salt, green chillies and saute for 10 minutes. Make sure the vegetables don’t brown.

Step 4

Add the coconut milk and water and let the stew simmer. Cook until all the vegetables are done.
