Pineapple Pachadi is a simple and sattvik dish from Kerala that is also served as a part of the Sadhya meal. Slightly tangy and sweet, this recipe is a must-have on any day. Check out the recipe.
1 cup pineapple, chopped ¼ cup coconut, grated 1 green chilli, chopped ½ tsp yellow mustard seeds ½ tsp cumin seeds ½ cup yoghurt Salt, to taste ¼ tsp turmeric powder 1 tsp jaggery powder ½ cup water For the tempering: ½ tsp coconut oil ¼ tsp mustard seeds 1 dry red chilli 1 sprig curry leaves

Place the coconut, green chilli, cumin seeds and mustard seeds in a mixer jar and grind to a fine paste with some water.

Place the pineapple chunks, turmeric powder, water and jaggery in a pan and put it on a medium heat on a stove.

Let the mix simmer until the pineapple chunks are softened but not mushy, then add the ground paste.

Mix well and cook for 2-3 minutes on a low heat while stirring occasionally.

Switch off the heat, let the mix cool down a bit, transfer into a bowl, then add the yoghurt and mix well.

Heat coconut oil in a small pan, add the mustard seeds, dry red chilli and curry leaves.

Once these stop spluttering, pour into the Pineapple Pachadi bowl and serve.
