This is a sweet and tangy side dish that is made with ripe pineapple, mustard seeds, grated coconut and other flavourful spices. Here is an easy recipe to make Kerala-style pineapple pachadi at home.

1 ripe pineapple (peeled cored and cut into small pieces), ½ tsp turmeric powder, 1 tsp chilli powder, salt to taste, 2 green chilli, 2 tsp mustard seeds, ¾ cup grated coconut, 5 tsp yoghurt, a few curry leaves, 4 dried red chillies, coconut oil for seasoning, water as required

Cook pineapple pieces with turmeric powder, chilli powder and salt for 3-4 minutes. Grind coconut, 1 tsp mustard seeds and chillies to make a smooth paste.

Pour this coconut paste into pineapple mixture and stir well to coat evenly. Take off the mixture from heat and stir in the yoghurt.

In a saucepan, heat the oil and add the remaining mustard seeds, curry leaves and red chillies. Pour this over the pineapple mixture and serve.
