From the Land of God’s Own Country comes the recipe for instant Mango pickle that can add a burst of flavour to various recipes. You can serve it with paratha and raita, and the meal will be complete. Here is your guide to replicating the condiment at home.
¼ cup oil 2 cup raw mangoes A few curry leaves 2 tbsp salt 2-3 tsp chilli powder 2.5 tsp mustard seed ½ tsp fenugreek seeds 2 tsp white vinegar
Wash mangoes and cut them into small pieces. Add salt and keep them aside.
Grind mustard seeds and fenugreek seeds into a coarse blend.
Heat oil and let a few mustard seeds splutter. Add the powdered blend and turn off the heat.
Add curry leaves and chilli powder to the hot oil and pour it over salted mango slices.
Taste the salt and add more if needed. You can also add vinegar at this stage to increase the shelf life.
Instant mango pickle is ready, and you can enjoy day and night.
