Kerala vegetable stew is a delightful South Indian dish, known for its mild flavours and creamy coconut milk base. It's a comforting medley of assorted vegetables, gently simmered in coconut milk and seasoned with aromatic spices.
2 cups Assorted vegetables (carrots, potatoes, beans), diced 1 can (400 ml) Coconut milk 2 Green chilies, slit 1-inch piece Ginger, grated A sprig of Curry leaves 2-3 each of Whole spices (cinnamon, cloves, cardamom) 1 medium-sized Onion, sliced 2 tbsp Coconut oil 1/2 tsp Mustard seeds Salt, to taste
In a large pot, heat coconut oil and add mustard seeds and whole spices. Sauté until they crackle.
Add onions, green chillies, and curry leaves. Cook until onions turn translucent.
Toss in the diced vegetables, grated ginger, and salt. Mix well.
Pour in the coconut milk and bring the stew to a gentle simmer. Cover and cook for 15-20 minutes
Once the vegetables are cooked, remove the pot from heat. Adjust the seasoning to taste. Serve hot with appams.
