Fried rice is the best way to turn leftover grains into a delicious snack. It is the simplest solution to your hunger pangs and tastes delicious. You can pair it with a refreshing mocktail or serve with a cocktail on the side. Try this Kerala-style recipe.
4 cardamoms 3 cups Basmati rice ¼ cup unsalted cashews 1 tbsp ghee ¼ cup raisins Salt to taste 1 tbsp rose water ½ tsp cumin seeds 1 sliced onion
If you don’t have leftover rice, wash and soak Basmati grains.
Pressure cook the grains and keep them aside to cool off.
Meanwhile, saute cashews, cumin seeds, onions, and raisins in ghee.
Toss cooked rice with the ingredients and sprinkle salt.
Drizzle two tablespoons of water and cover the pan.
After 5 minutes, turn off the flame and enjoy the dish.
