This coarsely ground accompaniment for idlis, rice and kanji is a delicious condiment packed with flavour from coconut, red chillies and shallots.

1 cup freshly grated coconut 8-10 shallots, peeled 4 dry red chillies 1-inch piece ginger 5-7 curry leaves 2 teaspoons tamarind pulp 1 tablespoon coconut oil Salt, to taste

Add all the ingredients to a blender except the grated coconut and oil.

Grind to a paste and add a couple of tablespoons of water as well as the grated coconut.

Grind into a coarse, moist paste and transfer to a bowl before pouring the coconut oil on top.
