Packed with the flavour from spices and coconut oil, this delicious egg roast recipe is for those who have an affliction for some spicy food to start the day.
3 hard-boiled eggs 1 onion, finely chopped 2 teaspoons ginger-garlic paste 6 curry leaves 2 teaspoons red chilli powder 1 teaspoon turmeric powder ¼ cup water 1 tablespoon coconut oil Salt, to taste
Add the chopped onions, ginger-garlic paste, chilli powder and turmeric powder to a pan.
Pour the water and cook the mixture until the raw flavour of the spices disappear and the mixture cooks into a mush.
Add the coconut oil and curry leaves and stir well to let them sizzle.
Cut the boiled eggs into half and place in the spice mixture to cook for an additional 3-4 minutes.
Take off the heat once the eggs are fully coated with the spice mixture and serve with bread, rotis or paratha.
