Packed with the medicinal benefits of raw turmeric, fresh ginger and a few veggies, this soup is the ultimate comfort food for autumn and winters. Here’s the recipe for you to try out.

2-inch raw turmeric piece 1-inch fresh ginger piece 2 carrots, peeled and chopped 1 onion, chopped 2 garlic cloves 1 cup coconut milk 3 cups vegetable stock Salt, to taste 2 tsp oil

Wash and clean the turmeric and ginger pieces, then chop them finely with skins on.
Heat oil in a large pot, then add the garlic, ginger, turmeric and saute for a minute.

Add the carrots, onions, salt and mix well. Saute the mix for a few minutes then add coconut milk and stock.

Mix well and simmer to cook the Ginger-Turmeric Soup for half an hour. Blend the soup until no lumps remain.
Reheat the soup and serve it hot with croutons.
