Karivepaku Podi, also known as curry leaves powder, is a South Indian essential. If you often cook South Indian dishes instead of buying a pre-packed masala, hereâs how you can make the podi at home.
1 teaspoon oil 1 tablespoon channa dal 1 tablespoon urad dal 1 tablespoon dhaniya 1 teaspoon jeera 1 teaspoon black pepper 5 dry red chillies 1 cup loosely packed curry leaves 1 tamarind, small lemon size Salt to taste
To make the podi, add in oil and roast on slow flame till aromatic.
Add the rest of the ingredients and cook till the curry leaves are a little crispy.
Grind this into a fine powder and let it rest.
Store it in an airtight container till next use.
