Karela nu Shaak, a popular Gujarati dish, celebrates the unique and bitter flavor of bitter gourd. This delectable vegetable stir-fry is skillfully spiced to transform the bitterness into a delightful and nutritious experience, making it a favorite among both bitter gourd enthusiasts and those looking to explore new flavors.
To prepare karelas, peel them, cut them into rounds, and scoop out the seeds. Add some turmeric and salt and let it sit for 30 minutes.
To lessen the bitterness, squeeze some water from the karelas. In a kadhai, put in some oil and fry some cashews and raisins. Take them out once done
Add some mustard, sesame, and cumin seeds to the oil. Put in the karelas and the chopped potatoes.
Let the sabji simmer with the lid on until it is tender. Stir in the salt, jaggery, and spices Now add some fried cashews and raisins.
Sprinkle some dried shredded coconut and fresh coriander leaves on top. Enjoy with hot phulkas.
