INGREDIENTS [FOR MARINADE]

250 grams chicken thighs ½ cup thick buttermilk 2-inch piece ginger, grated 4 cloves garlic, minced 2 spring onions, chopped 2 tablespoons soya sauce 1 tablespoon sesame oil 1 tablespoon light brown sugar Salt, to taste

INGREDIENTS [FOR CHICKEN]

½ cup all-purpose flour 3 tablespoons corn flour 1 teaspoon red chilli powder 1 teaspoon garlic powder 4 tablespoons chicken marinade Salt, to taste Oil, for frying

STEP 1

Combine all the ingredients for the marinade with the chicken and rest overnight in the refrigerator.

STEP 2

Allow the chicken to come to room temperature the next day, while you make a dry mix with the flours and seasoning.

Add some of the marinade into the dry mix before dipping the chicken pieces into the flour mix and gently dropping them in a pan of hot oil.
