Kanika is a mildly sweet and extremely fragrant dish from Odisha. It is often prepared during festivals and is an integral part of the Chappan Bhog offered to Lord Jaganath. The traditional dish gives an essence of Odisha's culinary heritage, making it a delightful choice as either a standalone dish or a complement to a festive meal.
1 cup basmati rice 2 tbsp ghee ¼ cup sugar ½ tsp turmeric powder 4-5 green cardamoms 2-3 cloves 1 cinnamon stick 1-2 bay leaves 2-3 tbsp raisins 8-10 cashews A pinch of salt 2 cups water
Rinse one cup rice, drain the water and let it dry
Heat ghee in a pan, add rice, cardamom, cloves, cinnamon stick, and 2 bay leaves. Sauté until you get a strong aroma
Mix turmeric, sugar and a pinch of salt
Add 2 cups of water, cover the lid and cook the rice on low flame until the water is absorbed and the rice is cooked
Sauté cashews and raisins in ghee, mix it in the rice and serve
